Εγώ έχοντας πρώτα Xp και βάζοντας τα 7 ανοίγοντας το iso με daemon tools μέσα από τα XP, έκανα install και μόλις τελείωσε μετά το restart μου έχει επιλογή.

Yeap γιατί εσύ έβαλες πρώτα xp και μετά 7. Από ότι βλέπω το ανάποδο δημιουργεί διάφορα προβλήματα.

Οπότε NuC αν δεν σε πειράζει να το ξανακάνεις από την αρχή με τα xp πρώτα ίσως όλα να πάνε ρολόι, αν τώρα δε θες δοκίμασε κάτι σαν

Που δείχνει πως να χρησιμοποιήσεις προγραμμα που φτιάχνει bootloaders.
Επίσης

Start the Windows 7 install DVD, and choose "Repair" and "Command Prompt". At the prompt, do a "bootrec /RebuildBCD" to write down a new bootloader.

Αλλά αυτό μπορεί να μην σου κρατήσει τα xp στο bootloader και απλά να φτιάξει για τα 7.
